Cream of spinach soup and sourdough bread. Yummy!
Here's the recipe, found at AllRecipes.
Ingredients:
1 1/2 cups water
3 cubes chicken bouillon (I subbed GF broth)
1 (10 ounce) package frozen chopped spinach (I used 10 oz fresh, holding back about 2 handfuls to throw in at the end.)
3 tablespoons butter
1/4 cup all-purpose flour (I subbed GF flour)
3 cups milk
1 tablespoon dried minced onion
salt and pepper to taste
Instead of salt, I used garlic salt. I also added a dash of cayenne pepper, a dash of nutmeg and 1/4 cup of Parmesan. (all of these ideas taken from the recipe's comments.)
Directions:
In a medium saucepan, combine water, bouillon, and spinach. Bring to a boil, and cook until spinach is tender.
Melt butter in a large saucepan over medium heat. Stir in flour, and cook for 2 minutes. Gradually whisk in milk. Season with minced onion, salt, and pepper. Cook, stirring constantly, until thickened. Stir in spinach mixture.
Once I stirred everything together, I blended it all with my immersion blender then threw in a couple handfuls of fresh spinach and let it cook a little, just to make things interesting!
It was super yummy and Tyler loved it. Next time I'd probably double it though so we could have more leftovers!
